Module 2: Food & Beverage Service
The F&B Service module covers the full hospitality service spectrum: fine-dining silver service (table d'hôte sequencing, formal table layout, plate presentation), banquet operations at scale (300–1,200 cover events typical at Gujarat destination weddings), in-room dining protocols, captain duties, billing and POS software, complaint handling and upselling techniques.
Gujarat-specific: the module emphasises zero-proof beverage service (Gujarat prohibition state) — artisanal coffees, botanical infusions, signature mocktails, traditional Gujarati buttermilk and Kathiawadi beverage service. Theoretical alcohol service is covered for students who later work outside Gujarat, but practical bar handling is optional.
Module 3: Housekeeping & Laundry Operations
Housekeeping is the operational backbone of hotel reputation — the module covers room operations (bed-making, bathroom servicing, amenity setup), public-area maintenance, linen handling and laundry workflows, supervisory standards, room inspection protocols and inventory management.

The Kitchen module gives every hotel management student operational orientation to commercial-kitchen workflows: knife skills, mise-en-place, basic food safety (HACCP awareness), kitchen brigade hierarchy, and short rotations across cold kitchen, bakery and butchery stations.
Wings supports a pure-vegetarian / Jain-friendly Kitchen track for students from conservative or religious backgrounds — opt out of non-vegetarian handling on request. Cambridge English + Personality Development
Wings embeds Cambridge Assessment English material across the 6-month campus phase, progressing from conversational basics (for Gujarati / Hindi medium students) to professional fluency by graduation. English communication is the second-highest hiring signal after PMS proficiency.
Personality Development covers posture, professional attire, dining etiquette, telephone and email etiquette, grooming standards, confident public speaking, mock interview practice, cultural sensitivity for international guests, and stress management. Mock interviews are conducted multiple rounds during the campus phase — individual, panel, group discussion and case-study formats.
Internship Phase (Months 7-12)
The 6-month paid internship at branded 4-star and 5-star hotel partners is the second half of the 1-year programme. The hotel pays a stipend directly to the student — ₹1,500–₹7,000/month depending on property tier and city — in addition to (not deducted from) the Wings tuition fee.
Trainees are treated as probationary staff and assigned live shifts in their specialisation department (Front Office, Housekeeping, F&B Service or Kitchen) under a department supervisor. The Wings placement cell monitors internship welfare via monthly check-ins and intervenes if partner hotels violate training norms. High performers frequently receive a Pre-Placement Offer (PPO) from the same property.
